In a crowded market, it takes a small idea to grow into a success story. And as they celebrate their latest St Ives venture, Passiontree Velvet is just that.



Immersing customers in a world of edible luxury, this English Tea House, born out of the concept of a European-style patisserie, opened its tenth set of doors this month.



Set aback the rush of Mona Vale Road, it is a sweet, sweet sanctuary of cakes, macarons and more.
“The concept began in Queensland four years ago between our owner and a French pastry chef. The patisserie was front and centre, with a few other items on offer,” says Project Manager Chris Sheldrick.
“Over the years, the store has evolved into something new, as we constantly ask ourselves, ‘what is missing in the market?’”



Hailing from Britain, Sheldrick and his team have looked to revitalise the traditional traits of High Tea.
“Everyone knows High Tea here! We like to change it up,” he says, detailing his cake of the day: a ‘Nut Bite’ layered with pistachio, almond and cashews and immersed between chocolate, mousse and coconut dacquoise.



Years later, Passiontree Velvet has become so much more. The new store, decked out in pastel colours and hosting a relaxed, community feel, is the first to not only open at night, but to introduce a brunch menu.
“Aussies also love to brunch!” laughs Sheldrick.



And the menu is luxurious. Their pancakes are tea-infused, with a side of caramel popcorn, hazelnut praline and berry gel. Or maybe their breakfast board for two (or three) with garlic mushrooms, fried eggs and fruit will take your fancy.



“This is our concept store and where we’ll be testing anything new.”



So while you may have first dropped in for tea and a slice of chocolate truffle cake, you’ll no doubt be back for something more.
